A Sunday soup on the Greek islands, this version of chickpea soup gets heat from red pepper flakes and freshness from lemon. Olive oil makes the chickpeas into a hearty one-pot meal.

How to make it?

Cook the Vegetables

Cook the onion and carrot in half of the olive oil for about 8 minutes, until softened.

Add the Chickpeas and Simmer

30 min

Add the drained chickpeas, bay leaf, and red pepper flakes. Cover with enough water and simmer over low heat for 30 minutes.

Mash Some Chickpeas

Scoop out one-third of the chickpeas, mash them, and stir them back into the soup to thicken it naturally.

Finish with Lemon and Olive Oil

Remove from the heat and stir in the lemon juice and remaining olive oil. Season with salt and serve.

Bir gece bekletilmiş kuru nohut bulamadığım için konserve nohutla yaptım, kaynatma süresini 30 dakikadan 12 dakikaya indirdim ve sonuç yine kıvamlı çıktı. Zaman kısıtlıysa bu ikame gerçekten işe yarıyor.

Konserve nohutla kısaltılmış süre gerçekten işe yarar, teşekkürler paylaştığınız için. Yalnız ezme adımında konserve nohut daha çabuk dağıldığından o kepçeyi biraz daha az uzun tutmak yeterli olur.

Tarifte yazan 1 tatlı kaşığı pul biber bende hiç acı hissettirmedi, kendi damak zevkime göre bir kaşığa çıkardım. Çorbanın kendisi güzel ama acılı diye beklerken daha ateşli bir tat umuyordum.
