This sun-dried tomato bread is an olive oil loaf with oil-packed tomatoes worked into the dough during the folds. The tomatoes are not added during kneading: their acidity weakens the gluten network, and the pieces can be crushed during extended kneading, turning the dough red. Added during folding, the pieces stay intact and remain visible throughout the loaf.

Drain and chop the tomatoes

Drain the sun-dried tomatoes in a strainer for 5 minutes, then pat them dry with a paper towel; any oil left on them will make the dough slide and can make shaping impossible. Cut the tomatoes into 1-centimeter strips and mix them with the thyme.

Knead the dough

Dissolve the yeast in warm water and let it stand for 5 minutes. Add the flour, salt, and olive oil, then knead for 9 minutes. Stretch off a piece of dough; it is ready when it forms a thin membrane. Do not add the tomatoes at this stage; their acidity weakens the gluten network.

Fold in the tomatoes in two rounds

During the first hour of the first rise, spread the dough on the counter, scatter half the tomatoes over it, and fold the edges over to enclose them. Return the dough to the bowl. Repeat with the remaining tomatoes during the second hour. Adding them in two rounds distributes the pieces evenly; adding them all at once will make them collect at one end.

Shape the loaf

Transfer the dough to a floured counter, fold the edges toward the center, and shape it into a long loaf. Place it on a parchment-lined baking sheet. Tuck any tomato pieces that have surfaced back into the dough; exposed pieces will darken and turn bitter in the oven. Cover and let rise for the final proof.

Bake the loaf

Preheat the oven to 230°C / 445°F and place a pan of water on the lower rack. Score the top of the loaf with three diagonal cuts using a razor blade, then bake for 45 minutes. It is done when the crust is dark golden and the loaf sounds hollow when tapped on the bottom. Let it cool completely on a wire rack.

Reminder

The dough needs a 2-hour first rise, followed by a 50-minute final rise after shaping. These times are not included in the recipe’s stated duration. If you do not drain excess oil from the sun-dried tomatoes, the dough will slide and will not hold its shape.

Kuru domatesin yağını süzmek gerekiyor, süzmeden kattım ve hamur gluten yapısını kuramadı. Zeytinyağını hamura sonradan katmak da gerekiyor, baştan koyunca gluten kurulmuyor ve ekmek yayvan çıkıyor.
