Brik, a Tunisian specialty snack, is made by filling thin pastry with tuna, potato, and egg and frying it in hot oil. It takes careful timing to keep the egg yolk runny.
Mix the tuna, mashed potato, and parsley.
Place the filling in one corner of a pastry sheet and crack an egg in the center. Fold into a triangle to seal.
Fry in hot oil for 2 minutes, until crisp on both sides, keeping the egg yolk runny.
Drain on paper towels and serve hot.
Monitor the oil temperature; oil that is too hot can burn the outside while leaving the inside raw. Allergens: Contains fish (tuna), egg, and wheat (pastry).
