Upma is made by whisking roasted semolina into spiced water and letting it swell without the grains sticking together. It is a South Indian breakfast, with each household making it a little differently, but two rules are constant: toast the semolina dry first, and use water at three times its volume. Untoasted semolina turns mushy, while the wrong amount of water makes it pasty.

Dry-toast the semolina

Put the semolina in a dry skillet and toast it over medium-low heat, stirring constantly. Do not let it change color; toast only until it smells nutty and the grains flow freely instead of clumping. This is the step that keeps upma fluffy and separate; skip it and the result will be mushy. Transfer the toasted semolina to a plate and let it cool.

Chop the vegetables

Finely dice the onion, thinly slice the green chiles, and grate the ginger. Dice the carrot into 5 mm pieces; larger pieces will not cook through while the water is absorbed. Shell the peas and chop the cilantro.

Prepare the spice tempering (tadka)

Heat the oil in a pot and add the mustard seeds. When they begin to pop and crackle, add the urad dal, chana dal, and cashews. Stir for 1–2 minutes, until all three turn golden, then add the curry leaves—they will sizzle and curl. Keep the heat at medium so they do not burn.

Sauté the onion and ginger

Add the onion, green chiles, and ginger to the pot and sauté until the onion is translucent. Do not brown the onion; upma is a light-colored dish. Continue to the next step once the raw aroma of the ginger has faded.

Bring the water and vegetables to a boil

Add the carrot and peas and stir for 1 minute, then pour in 600 ml of water and add the salt. Bring the water to a full boil; if you add the semolina before it boils, the grains will not absorb the water evenly. Taste and adjust the salt now, since it will be harder to stir later.

Whisk in the semolina

Lower the heat. Hold a whisk in one hand and slowly stream the toasted semolina into the boiling water with the other, whisking constantly as you pour. The mixture will thicken right away. Cover and cook for 3 minutes, until all the water is absorbed. It is ready when you see small steam holes across the surface after uncovering.

Finish with lemon and cilantro

Remove the pot from the heat, drizzle in the lemon juice, and fluff the upma with a fork; a spoon can crush the grains. Sprinkle with the chopped cilantro and let it rest, covered, for 2 minutes. Serve hot with coconut chutney on the side.

Reminder

Keep whisking as you pour the semolina into the water; if you add it all at once, it will form lumps that will not break up as it cooks.

İrmiği kuru kavurmayı atlayınca lapa yapış yapış oluyor, kavurunca tane tane kaldı. Limon suyunu ocaktan aldıktan sonra sıkmak da önemli, kaynatınca hem rengi hem keskinliği kayboluyor.
