Van-Style Herb Cheese is made by layering the curds from coagulated milk with wild herbs such as sirmo and heliz, then pressing them. The herbs are placed between the layers rather than mixed into the curds, so their aroma develops gradually as the cheese matures. Eat the fresh homemade cheese within 1 week; it is not aged for months like traditional cubed cheese.

How to make it?

Bring the milk to renneting temperature

In a heavy-bottomed saucepan, heat the milk to 32°C / 90°F, stirring occasionally. Check the temperature with a thermometer; do not test it by touch. Above 35°C / 95°F, the curd will become firm; below 28°C / 82°F, it will not set. Remove from the heat once it reaches the target temperature.

Dissolve and add the rennet

Dissolve the rennet in a 100 ml measure of lukewarm, chlorine-free water. Pour it over the milk and stir for just 30 seconds, moving from top to bottom. Overmixing can break up the curd before it forms. Cover the pot and leave it undisturbed.

Cut the curd

Insert your finger horizontally into the surface of the curd and lift it: it is ready if it breaks cleanly and the surface is covered with clear yellow whey. Using a long knife, cut vertical and then horizontal lines to make 1 cm cubes. Leave them undisturbed for 10 minutes so they settle to the bottom.

Drain the whey

Use a ladle to transfer the curd into a large colander lined with cheesecloth, and collect the whey in a separate bowl. Gather the corners of the cheesecloth and tie it into a bundle. Place a flat plate on top and weigh it down with 2 liters of water. Drain until the whey runs in slow drips.

Prepare the herbs

Trim the tough stems from the herbs, wash them twice in plenty of water, and dry them thoroughly with a clean towel. Wet herbs can cause the cheese to darken and sour. Chop the sirmo and heliz into 1 cm pieces, leaving the thyme leaves whole. Rub the herbs lightly with some of the salt, let stand for 5 minutes, then squeeze out the liquid.

Layer the cheese and place it in brine

10 min

Crumble the drained curd by hand and mix it with the remaining salt. In a mold, layer finger-thick cheese, a thin layer of herbs, and more cheese, pressing each layer with your palm. Finish with a layer of cheese. Make the brine by dissolving 100 grams of salt in one liter of boiled, cooled water. Transfer the cheese to the brine and refrigerate.

Reminder

Use pasteurized milk and follow the rennet manufacturer’s package directions for the amount. Some rennet brands are three times as strong as others. Allow 60 to 90 minutes for the curds to form; this time is not included in the recipe duration. Allergen: Contains milk and dairy products according to the ingredient list. Sirmo ve heliz bizim tarafta kurutulmuş satılıyor. Kuru otu ılık suda on dakika beklettim, yoksa peynirin suyunu çekiyor. Pıhtıyı keserken bıçağı dik tutup eşit kareler çıkarmaya çalıştım, düzensiz kesilen pıhtının suyu tam süzülmüyor ve peynir erken ekşiyor.
