Prepare the Chicken

Rinse the whole chicken and pat it thoroughly dry with paper towels. Let it come to room temperature.
Mix the olive oil, lemon juice, crushed garlic, thyme, salt, and black pepper. Rub the mixture all over the chicken, including under the skin.
Place the chicken in a roasting pan and cook in a preheated 190°C / 375°F oven.
For the final 10 minutes, raise the oven temperature slightly to brown the skin well. Let the chicken rest for a few minutes before serving.
Important: Removing the chicken from the oven without checking its internal temperature risks leaving it undercooked; check the thickest part of the thigh. Caution: Bring the chicken to room temperature before cooking, or the outside may burn while the inside remains raw.
