Zahter salad is a Hatay breakfast dish that tosses fresh zahter leaves with onion, pomegranate molasses, and olive oil. Zahter belongs to the thyme family and has a bold flavor, so measure it rather than using a handful like parsley. The key step is rubbing the onion with salt: unrubbed onion can overpower the herbs.

Trim and dry the zahter

Strip the leaves from the tough zahter stems with your fingers; the stems remain woody. Wash the leaves twice in plenty of water, then spin them dry or spread them on a clean towel. Wet leaves will not hold the dressing and will water down the salad.

Rub the onion

Slice the onion into thin half-moons, sprinkle with half the salt, and rub with your fingertips for 1 minute. It is ready when the slices turn translucent and shrink noticeably. Drain and discard the bitter liquid.

Make the dressing and toss just before serving

Whisk the pomegranate molasses, olive oil, lemon juice, and remaining salt in a separate bowl until emulsified. Combine the zahter, onion, and walnuts in a large bowl. Pour on the dressing just before bringing the salad to the table. Toss with two or three gentle folds, then sprinkle with pomegranate seeds.

Reminder

Toss the salad just before serving. Zahter leaves begin to release liquid and darken within 20 minutes of contact with pomegranate molasses, so have the dressing ready in a separate bowl.
