Can Dried Beans Be Cooked Safely in a Slow Cooker?

Do not put dried beans directly into a slow cooker. The appliance’s low setting often does not reach boiling, so it may not break down phytohemagglutinin in the beans; reports say that levels of this substance may even increase in that temperature range. The correct order is to soak the beans for at least 5 hours, discard the soaking water, boil them vigorously in fresh water on the stove for at least 10 minutes, and only then transfer them to the slow cooker. Lentils and canned legumes do not require this step.

A slow cooker works by cooking food for a long time at a low temperature, which is an advantage for many dishes. With dried beans, the opposite is true. The appliance’s low setting usually stays below the boiling point of water, but breaking down the phytohemagglutinin in beans requires a full boil. Cooking at a warm temperature for hours does not destroy this substance; it only softens the beans and creates the impression that they are safe. Steam on the appliance’s lid can also be misleading: seeing steam does not mean the water is boiling. For this reason, the cooking times in the appliance’s recipe book are not a sufficient measure for dried beans on their own.

More importantly, reports say that the amount of this substance can increase in that temperature range. In other words, extending the cooking time is not a solution: beans left on the low setting for eight hours are no safer than properly cooked beans. The high setting gets closer to boiling, but it does not reach the same temperature in every appliance, so it cannot be considered reliable. The decision is left to a preliminary step on the stove, not to the appliance. If you want to know the temperature the appliance actually reaches, you can measure it with a kitchen thermometer.

The correct order has four steps. Soak the beans in cold water, discard the soaking water, and rinse the beans. Cover them with fresh water, bring it to a boil on the stove, and keep it at a full boil for at least 10 minutes. Only after that, transfer the beans and their cooking water to the slow cooker and continue with the rest of the recipe there. This preliminary step adds only a few minutes to the total time. Do not discard the boiling water; transferring the beans with that water preserves flavor and texture.

Not all legumes are included to the same extent. Red and green lentils, mung beans, and dried peas do not pose this problem to the same degree and can be placed directly in the slow cooker. Chickpeas are not as risky as beans, but soaking and boiling them first gives a better result for both safety and texture. Canned legumes are already cooked and can be used directly after rinsing. If using a mixed-legume blend, follow the guidance for its riskiest ingredient and boil them all together.

Liquid amounts need different adjustment, too, and this is often overlooked. Because the lid stays closed in a slow cooker, steam does not escape; the amount of water given in a stovetop recipe will be too much here, leaving the dish watery. So reduce the liquid somewhat. Do not open the lid unnecessarily during cooking, because each time it is opened the appliance loses heat and takes a long time to recover. When cooking is finished, do not leave the food in the appliance for hours; transfer it to a covered container and cool it. Spreading leftovers in a thin layer in a wide container helps them cool much faster.
