Granulated sugar can sit for years without truly spoiling, since its crystal structure does not hold enough moisture for bacteria or mold to grow. Still, saying it "never goes bad" is misleading — dampness, absorbed odors and pest contamination are three separate problems, each with its own fix. The one situation that genuinely calls for throwing sugar out is a jar with rock-hard lumps, ant trails or tiny insects, or a smell that has gone beyond a faint spice/detergent note into actual mold. Only the last of these is a real safety issue; the first two are just texture and cleanliness matters. Why does sugar clump? The only reason sugar clumps is that it pulls moisture from the air. That moisture glues the crystals together, and if the container is not sealed and moved somewhere cool, it can turn into a block you need to break apart within a few weeks. That appearance does not mean the sugar has spoiled — it can still be crumbled by hand or with a fork and used normally. In humid kitchens, especially on shelves near the stove or dishwasher steam, this happens faster. A loosely closed lid speeds up clumping noticeably. How can you tell if pests have gotten in? Sugar itself does not attract pests, but a jar left open can become a welcoming spot for ants or flour beetles. If you spot fine webbing, small moving insects, or brown specks inside, the whole batch should go — sieving it to clean it out is not a reliable fix. What does a change in color or smell mean? White sugar can turn slightly yellow over time, usually because it has picked up scent from nearby onions, spices or detergent, and that is not a safety concern. But if the sugar looks damp with a moldy smell, water has gotten into the jar, and mold may be growing inside the lump — in that case the whole container should be discarded. Clumping or yellowing on its own carries no food-poisoning risk; the real danger only appears once moisture and mold are involved. How should sugar be stored? Keeping granulated and powdered sugar in an airtight, lidded container in a cool, dry cupboard largely prevents both clumping and pest problems. Dropping a few whole cloves into the jar helps balance moisture. Brown sugar has a higher moisture content, so it should be kept separately in a tightly sealed container; if it hardens into a rock-hard lump, leaving it at room temperature for a short while softens it again. Why do brown sugar and confectioners' sugar seem to spoil faster? Brown sugar holds far more moisture than white sugar because of the molasses mixed back into it during processing, so left uncovered it can turn rock-hard within days. That hardening is not spoilage — placing a slice of bread or a damp piece of paper towel in the sealed container for a few hours softens it right back up. Confectioners' sugar behaves differently because of the cornstarch mixed into it; if it clumps, sifting it easily restores the original texture. For both types, the real spoilage sign is still the same: a moldy smell or visible colored spots. Without those, hardening or clumping alone is not a reason to throw the sugar away.
