How Can You Fix Uneven Cooking in an Air Fryer?

The most common reason food cooks unevenly in an air fryer is an overfilled basket. An air fryer cooks by circulating hot air inside the basket. When food is piled on top of itself or packed tightly together, air cannot pass between some pieces. Those pieces may stay soft, as if steamed, while pieces exposed to the airflow turn crisp. Frozen ingredients are also more prone to uneven cooking. If they are frozen together, they act like one large mass in the basket, so air can reach only the outside. Separating the pieces by hand before placing them in the basket can reduce this problem considerably.

Why is shaking the basket recommended? Halfway through cooking, pull out the basket and shake it, or turn the food with tongs. This changes the position of the pieces at the bottom and top so that all of them are exposed to the hot air more evenly. This step makes a clear difference with small pieces of food such as fries. Shaking may not be enough for large, thick pieces; turning each piece individually is more reliable for those.

How does arranging food in the basket affect the result? Placing food in a single layer with space between pieces is the most important step for even cooking. Once the basket is overfilled, the result may be uneven regardless of the temperature setting. For a large portion, cooking in several batches produces a much better result than overfilling the basket all at once. Cooking pieces of different sizes together can also lead to uneven results. Cook large and small pieces separately, or add the smaller pieces about halfway through cooking so everything finishes at the same time.

Should you adjust the temperature based on how full the basket is? Raising the temperature when the basket is overfilled does not solve uneven cooking; it can instead burn the pieces on the outside more quickly while leaving the pieces inside undercooked. The right solution is to reduce the amount of food, not increase the temperature. Air fryer models also differ. Uneven cooking is less common in models with shallow baskets, while food piles up more easily in deep, narrow baskets, where the problem occurs more often. Coating the food with a thin layer of oil beforehand can help it brown more evenly and help heat spread across its surface. This step is especially noticeable with frozen and naturally moist ingredients.

Putting food into the air fryer without preheating it for a few minutes can cause uneven heat distribution during the first minutes of cooking. Many manufacturers recommend a brief preheat, which can help frozen ingredients cook evenly. The basket itself can also lose its nonstick coating over time. Food may stick and collect in one spot in a worn basket, which can contribute to uneven cooking. Arranging the largest pieces near the edges of the basket and the smallest toward the center can also help with even cooking; the edges usually receive slightly more hot airflow than the center.
