The clearest sign that a vegetable has spoiled is its texture turning soft and watery. A fresh vegetable stays firm when you press it; one that has started to spoil gives way under your finger and sometimes releases liquid. Color change is the second reliable clue: a vegetable that has turned brown or gray, gone translucent at the cut surface, or grown fuzzy spots is no longer safe to eat. Smell matters too — a sour or moldy odor means it should be thrown out. Why is texture the first thing to check? Texture is the most reliable spoilage signal because the microorganisms that cause rot break down cell walls, softening the vegetable first. In firm vegetables like carrots, potatoes or zucchini, this shows up as a rubbery give or a dent that stays when you press it. Leafy vegetables soften much faster: lettuce and spinach leaves turn limp and watery within hours. If the stem is still firm but the leaves have collapsed, pick those leaves out and use the rest quickly. What do color and spotting tell you? A brown or gray patch on a cut surface usually comes from the flesh oxidizing on contact with air; on its own that isn't always spoilage, but once the discoloration spreads over most of the vegetable, freshness is gone. Dark patches near-black, especially paired with softening, point to advancing rot. A vegetable with white, green or black fuzzy spots on its skin has mold, and that alone is reason enough to discard the whole thing. When is smell a warning sign? Fresh vegetables smell earthy or faintly sweet; a shift to sour, ammonia-like or moldy smells shows that bacterial breakdown has already begun, often before any visible sign appears. If you notice that smell, it's safer to skip the vegetable even if it still looks fine. A sharp, gas-like smell in onions and garlic, or a musty-damp smell in potatoes, are early spoilage cues. Even a vegetable that's still firm should be treated with suspicion once its smell has changed. Can partly spoiled vegetables be trimmed and used? That rule doesn't apply once mold appears — mold can reach much further into the flesh than what's visible. Rather than deciding by smell alone, it's safer to weigh appearance and texture together before using a questionable vegetable. What should you check when buying to slow spoilage down? Just as important as spotting spoilage early is what you pick at the store: avoid vegetables that are bruised, cracked or damp, since one like that spoils far faster than the rest and can pass spoilage on to its neighbors in the fridge. A single crushed piece at the bottom of a bag can quietly spoil the whole batch sooner than expected. Washed vegetables spoil faster than dry ones, so washing is best left until right before you use them. Storing several different vegetables squeezed into one bag also traps moisture and speeds up spoilage; where possible, keep each type in its own loosely closed container.
