Fish that breaks apart during cooking can be used in fish cakes, salads, soup, or pastry fillings if it was cooked and stored safely. Breaking apart is not itself a sign of spoilage; changing the recipe does not make improperly stored fish safe.
Cooking and reuse. Cook raw fish to an internal temperature of 63 °C / 145 °F at its thickest point. When reheating a dish made with previously cooked and chilled fish, verify 74 °C / 165 °F throughout. If adding raw egg or another new ingredient to fish cakes, cook appropriately for all ingredients; browning outside is not enough. Remove bones.
Reducing breakage. Prepare a suitable pan, avoid turning the fish unnecessarily, and support it with a wide spatula. Adjust time and heat to thickness; fish does not need to come to room temperature first.
Storage. Refrigerate unused cooked fish promptly in small, shallow containers. Discard perishable fish left on the counter for more than 2 hours total, or 1 hour above 32 °C / 90 °F. Do not taste it to judge safety.
