How Long Can an Unopened Can of Food Be Stored?

The way to store an unopened can of food is to keep it in a cool, dry cupboard away from direct sunlight; under those conditions most canned goods stay safe well past the best-before date on the label. Because canning involves heat sterilization and an airtight seal, the food inside can keep for years. Even so, the can's outer condition can change over time, so shelf life should be judged not just by the date but by the physical state of the can itself. The production date printed on a can is different information from the best-before date; the production date only shows when the can was filled, while shelf life is calculated from the best-before date. Is homemade canning different from store-bought? Home-canned food usually has a shorter shelf life than store-bought cans, since it isn't sterilized at the same high, tightly controlled temperature as industrial canning, and is generally best used within a year. If the center of the lid is pulled slightly downward, that shows the seal has held and the vacuum is intact. That only confirms the seal; whether the food is safe depends on the jar having been canned with the right method and a tested processing time. If the lid has puffed upward over time, or there's no popping sound when it's opened, the jar can no longer be considered safely sealed and should not be eaten. Is the best-before date the same as the shelf life? The date on the label is when the manufacturer guarantees the food will be at its best flavor and texture; if the can is undamaged, it can usually still be eaten safely afterwards, with only a slight change in taste or texture. That depends entirely on the can not being dented, bulging or rusted. Some manufacturers print only a production date or batch number instead of a best-before date; in that case, general shelf-life ranges, usually somewhere between 1–4 years, can be used as a rough guide. What should you do with a bulging or rusty can? A can with a bulging lid, a dent, or one that hisses when opened should never be eaten and should go straight in the trash; those signs mean air has gotten in and bacteria that carry a risk of food poisoning may have grown. Small surface rust alone is not dangerous, but if it has eaten through to the inside, the can should be discarded the same way. Cloudy liquid inside once opened, an off smell, or food that looks an unusual color are other warning signs; in any of those cases, throwing it away without tasting it is the safest choice. Where should canned food be kept? The best spot for canned goods is a pantry or cupboard that stays below about 21°C / 70°F; a shelf next to the oven or in direct sun wears down the quality of the food inside over time. Standing cans side by side rather than stacked, away from moisture, also slows down rusting. Placing newly bought cans behind the older ones, rather than in front, makes sure the oldest stock gets used first; this simple rotation keeps cans from being forgotten at the back of the cupboard until well past their date. In short An unopened can can safely sit in a cool, dry cupboard for a while past the date on the label — what matters is the can's physical condition, not the date. A bulging, dented, or deeply rusted can should never be opened and eaten. Keeping cans rotated from oldest to newest also cuts down on how often each one needs to be checked individually, and keeps the cupboard current.
