Why should mushrooms release their moisture over high heat first?
Mushrooms contain a lot of water. When added to a pan, that water quickly comes out and collects at the bottom. If you add oil before the water has fully evaporated, which takes about 5 to 7 minutes, the mushrooms may look boiled instead of browned. A wide pan large enough to hold the mushrooms in a single layer helps the water evaporate more quickly and evenly.

When should you add the oil?
Adding butter or olive oil after the moisture has evaporated helps the edges of the mushrooms turn golden within 2 to 3 minutes. When should you salt mushrooms?
Adding salt at the start of cooking draws out more moisture through osmosis, which can delay browning by a few minutes and make it harder for the mushrooms to reach the desired texture. Adding salt after the oil, once browning has begun, can help the mushrooms brown faster and more evenly. This small change in timing is a practical way to get more noticeable browning in the same 7 to 10 minutes; adding black pepper in the final minutes can also help preserve its aroma.
