Lamb liver's calories depend on whether it is weighed raw or cooked, moisture loss, and added flour and fat. Do not apply a value for 100 grams of raw liver directly to 100 grams of cooked liver. Even cooking without oil can change the value per 100 grams through water loss.
Calculating portions. Count added oil, flour, onions, rice, and bread separately. Compare lamb and beef liver using the same preparation and weight basis. Slice thickness or cooking time alone cannot determine total calories.
Vitamins and frequency. Liver is very rich in vitamin A. Avoid liver and liver products during pregnancy. To limit excessive vitamin A intake, the NHS advises eating liver and liver products no more than once a week; this does not mean everyone should eat liver weekly. Storage. Buy liver with an appropriate cold chain and refrigerate promptly; cook it soon or freeze it. Do not use it if it has an off odor or spoilage signs; a normal appearance does not establish safe cooking.
