How Many Calories Are in One Pişi (Turkish Fried Dough)?

1 medium pişi (Turkish fried dough, about 40 grams, deep-fried) contains an average of 120–150 calories. The calorie count is high because the dough absorbs a significant amount of oil while frying; the raw dough does not contain those calories before it is fried. When the same dough is baked with dry heat, like a savory pastry, 1 piece of the same size has about 90–100 calories. The difference comes almost entirely from oil absorbed during frying.

Why Does Turkish Fried Dough Absorb So Much Oil?

When yeast-raised dough is immersed in hot oil, the air pockets inside it expand quickly. As water evaporates, the pockets empty and hot oil fills the spaces. The thinner the dough is rolled, the greater its surface area and the more oil it absorbs. Thicker pieces absorb relatively less oil but have a less crisp exterior. The amount of egg or milk added to the dough also affects oil absorption somewhat; richer dough tends to absorb a little less oil because less water evaporates.

Does Oil Temperature Affect Calories?

A piece fried in oil that is not hot enough stays in the oil longer as the inside cooks before the outside firms up, and it absorbs more oil than usual. In that case, 1 piece can contain up to 170–180 calories. If the oil is hot enough (about 170–180°C / 340–355°F), the outside of the dough firms quickly and the crust greatly limits how much oil enters, keeping the calorie count in a lower range. Checking the oil temperature with a thermometer during frying affects both flavor and calories.

What Is Its Nutritional Value?

Most of the calories in 1 piece come from carbohydrates and fat; its protein content is quite low because of the dough. Since it is made with yeast-raised dough, it also has limited fiber. Compared with a serving of legumes or vegetables with the same calorie content, it is much less filling.

How Do Cheese or Honey Change the Calories?

1 piece filled with one 5 ml measure of cheese has 20–25 more calories than the plain version; the cheese’s fat content is the main reason for the increase. A piece eaten with honey can gain as many as 60–65 calories for each 15 ml measure of honey. Honey raises the calorie count much more noticeably than cheese.

Is There a Calorie Difference Compared with Syrup-Soaked Fried Dough Balls?

Lokma (syrup-soaked fried dough balls) are made from similar yeast-raised dough and deep-fried, but they are cooked in smaller pieces and dipped in syrup afterward. 1 ball generally contains 60–70 calories. The sugar in the syrup accounts for a noticeable portion of its calories; 1 piece of the same size without syrup has about 35–40 calories.

1 piece of Turkish fried dough contains about 120–150 calories; baking it noticeably reduces that amount. Oil temperature and added ingredients are the main factors that change the calorie count. Compared with similar yeast-raised pastries, syrup-soaked fried dough balls are generally lower in calories because each piece is smaller.
