How Many Minutes Should Jam Be Boiled to Set?

Chopped fruit for jam generally sets after boiling for 25-40 minutes once the sugar has been added. The time varies according to the fruit's water content and pectin level; fruits with high pectin, such as apples and quinces, thicken more quickly, while juicy fruits such as strawberries and cherries need to boil longer. How can you tell when it has set? The jam is set if syrup dropped onto a cold plate turns opaque within a few seconds and wrinkles when pushed with a finger. This test should be done every time instead of relying only on the cooking time because even the same fruit can contain different amounts of water and pectin depending on the season and ripeness. Regularly skimming the foam that forms during boiling preserves the jam's clarity and helps it continue boiling without overflowing. Boiling the fruit in its own juice for a few minutes before adding sugar helps the jam set more controllably in the next stage. Why is boiling it for too long harmful? Boiling for substantially longer than 40 minutes causes the sugar to caramelize, darkens the jam, and makes the fruit's natural flavor disappear in favor of a dominant sugary taste. Jam that is boiled too long may also become firmer than expected when cooled, with a texture almost like jelly. What can you do with low-pectin fruit? Setting can be difficult with low-pectin fruits such as strawberries and cherries; in this case, adding a little lemon juice (the pectin and acid in lemon support setting) or boiling the fruit mixed with a high-pectin fruit such as an apple shortens the time and makes the result more reliable. Should it be boiled over low or high heat? Jam is generally cooked over medium-high heat at a distinct boil; prolonged boiling over very low heat can make the fruit too soft and fall apart and give the jam a cloudy appearance. When the boil is steady and moderate, water evaporates faster and the jam sets in less time. How do you determine the time for mixed-fruit jams? In jams made by combining multiple types of fruit, the total time is determined by the juiciest fruit in the mixture; softer fruits such as bananas are added during the last 5-10 minutes of boiling to prevent them from becoming overly mashed. This sequence helps all the fruits retain the desired texture at the same time. How should the jam be transferred to jars when boiling is finished? Once set, the jam should be poured into clean, dry jars while still hot, within 5-10 minutes after it is removed from the heat; jam left to cool begins to form a skin and does not spread smoothly when transferred into jars. After closing the lids, process the jars in a boiling-water bath instead of turning them upside down; the heat from filling may not kill airborne mold spores, and inverted jars may seal weakly. Once the jam has cooled completely, checking whether a slight indentation has formed in the center of the jar is a simple way to tell whether the lid has vacuum-sealed. A jar that has not vacuum-sealed should not be left at room temperature; it should be placed directly in the refrigerator and consumed within a few weeks. How long can homemade jam be stored? Jam that has been processed in a boiling-water bath and has vacuum-sealed can be stored for up to one year in a cool, dark place as long as it remains unopened; after opening, it should be consumed within a few weeks if kept in the refrigerator.

Çilekle yaptığım reçelde 40 dakika kaynattım ama kıvam yine de biraz akıcı kaldı, galiba çileğin pektini az olduğu için limon suyu eklemem gerekiyormuş; tabak testini yapmadan önce durup soğuk tabakla kontrol etmeliydim.
