How Should Used Frying Oil Be Stored, and for How Long?

Adding a small note to the strained oil to record how many times it has been used can help you remember when the third use is coming up and prevent using the oil too many times. Using a funnel when pouring used oil into a bottle prevents oil from getting on the outside and making it sticky. Some municipalities have collection points for used frying oil. Oil taken to these points can be recycled into products such as biodiesel, so it is a good idea to check local options before throwing it away. A paper filter or coffee filter catches fine crumbs more effectively than a metal sieve, helping the stored oil stay clear longer. Different oils have different smoke points, so the number of times each oil can be reused also varies. Oils with higher smoke points, such as sunflower oil, generally withstand more reuse. Ayçiçek yağı yerine kalan zeytinyağını kızartmada kullanıp süzerek sakladım, ikinci kullanımda tadı biraz ağırlaştı ama yenilir durumdaydı; zeytinyağı tekrar kızartmaya uygun mu emin olamadım, üçüncü kullanıma cesaret edemedim.

Zeytinyağı da diğer sıvı yağlar gibi süzülüp saklanabilir, ancak dumanlanma noktası ayçiçek yağına göre daha düşük olduğu için iki kullanımdan sonra tadı daha belirgin ağırlaşır. Kızartma için tekrar kullanacaksanız iki kullanımı geçirmemenizi öneririz.
