How to Choose Sugar and Sweeteners

The right sugar or sweetener depends on the recipe: in a dessert, the result depends on granule size, how quickly the sweetener dissolves, and how well it retains moisture. Granulated sugar is the most common and versatile type; it works well in baked goods and syrup-soaked desserts. For preparations that need to dissolve quickly, such as frosting or cake glaze, confectioners' sugar is preferred because its fine texture disperses in liquid without clumping. Alternatives such as brown sugar, honey, and stevia can affect both sweetness and texture or color. Which one to choose depends on the recipe's moisture level and cooking method.

When Should You Use Granulated Sugar?
Because its granules are medium-sized, granulated sugar helps trap air when beaten into creamy mixtures and dissolves easily into syrup without crystallizing. When creamed with butter in cake and cookie dough, the granules create small air pockets in the fat, helping produce a fluffy texture. This is why it is the most commonly used type in home kitchens: it dissolves reliably in sweet and savory recipes and in both hot and cold mixtures. Granule size directly affects the result; very coarse sugar may not dissolve completely in some doughs before baking.

When Should You Use Confectioners' Sugar or Brown Sugar?
Confectioners' sugar is very finely ground sugar mixed with cornstarch. Use it for frosting, creams, and decorating when it needs to dissolve quickly without clumping. Added directly to cake batter, its starch content can make the texture slightly denser. Brown sugar is usually made by mixing molasses into refined white sugar; the molasses gives it a moister texture and a distinctive caramel note compared with granulated sugar. In cookie dough, it keeps cookies softer and moister. The difference between light and dark brown sugar comes from the amount of molasses; dark brown sugar leaves a more pronounced flavor.

How to Choose Liquid and Natural Sweeteners Such as Honey and Stevia
Honey has a stronger sweetness and more moisture than granulated sugar. If using it instead of sugar, reduce the other liquid in the recipe because honey contributes moisture of its own. Honey can also darken quickly and turn bitter at temperatures above 120°C / 248°F, so use care in recipes baked at high heat. Plant-based sweeteners such as stevia are used in much smaller amounts than granulated sugar because their sweetness is many times more concentrated. Check the conversion ratio on the package before substituting; replacing sugar in equal amounts can make the recipe excessively sweet. Liquid sweeteners also affect the recipe's total liquid content.

The Most Common Mistake When Choosing Sugar
A common mistake is to ignore the type of sugar specified in the recipe and use whatever is on hand. For example, using granulated sugar instead of confectioners' sugar can leave frosting gritty. Another mistake is replacing brown sugar with granulated sugar in equal amounts without accounting for the difference in moisture, which can make the dough runnier than expected. There is no single “best” sweetener: each one contributes a different texture, dissolving speed, and flavor profile. Following the type specified in the recipe gives the most reliable result, especially in cakes and syrup-soaked desserts that depend on precise balances.

Pudra şekeriyle yaptığım glazür pürüzsüz oldu ama nişasta oranından dolayı beklediğimden biraz yoğunlaştı, birkaç damla daha limon suyu eklemem gerekti. Yine de toz şekerle denediğim önceki seferden çok daha iyi bir sonuçtu.

Esmer şekerle yaptığım kurabiyeler gerçekten daha nemli çıktı, yazınızdaki gibi açık esmer kullandım ve karamel notası hafif kaldı. Toz şekerle denediğimden çok daha yumuşak bir sonuç aldım, bir dahaki sefere koyu esmeri de deneyeceğim.
