The earthy smell in mushrooms comes from a compound called geosmin, which occurs naturally in the environment where mushrooms grow and becomes part of their tissue. The smell is almost exactly like that of soil because some soil bacteria also produce geosmin; mushrooms absorb the compound from their surroundings. The type of mushroom affects the intensity of the smell. Truffles and some wild varieties can have a stronger earthy smell than cultivated mushrooms. The smell is usually more noticeable in freshly harvested mushrooms and may fade slightly as they are stored.
Does washing reduce the smell?
Briefly dipping mushrooms in water and immediately removing them, instead of wiping them with a damp cloth, removes surface dirt and some geosmin. Long soaking is not recommended because mushrooms have a spongy texture and absorb too much water, which they release during cooking and can make them lose their texture. Washing mushrooms just before using them is a balanced way to manage both odor and moisture. Mushrooms washed and stored in advance spoil faster and do not lose the smell completely.
How does cooking affect the smell?
Cooking mushrooms over high heat in a single layer reduces the earthy smell more noticeably than cooking a crowded pan over low heat. High heat helps some of the geosmin evaporate. Adding strong flavors such as butter, garlic, or fresh thyme can also mask the remaining smell. Dry mushrooms thoroughly with a paper towel before cooking to remove excess surface moisture, help them brown better, and reduce how much odor spreads through the pan.
Does cleaning without water work?
Cleaning mushrooms with a soft brush or dry cloth without using water is effective at removing dirt and completely avoids the wetness caused by water. However, some geosmin may remain on the surface, so the smell may be slightly more noticeable than after a quick dip in water. The best cleaning method depends on the mushroom. Dry brushing is usually enough for smooth-surfaced varieties, while brief contact with water may be more effective for removing dirt from folds in wrinkled varieties such as truffles. Special mushroom brushes are available for dry cleaning. Their soft bristles clean the delicate surface without scratching it, and they can be used quickly just before cooking.
Dried mushrooms may have a more concentrated earthy smell than fresh mushrooms because drying removes water while concentrating aromatic compounds. As a result, the soaking water used to rehydrate dried mushrooms can smell quite strong. Instead of pouring it out, strain it and add it to a soup or sauce base to make use of the flavor and avoid waste. Just strain out any sand or dirt that has settled at the bottom. Wrapping mushrooms in a paper towel before placing them in a storage container absorbs excess moisture and can somewhat reduce the odor spreading to other foods in the container. This simple step helps preserve freshness and manage odors.
