How to Protect Akide Candy and Other Hard Candies from Moisture

Akide and other hard candies should be kept in an airtight, tightly sealed container in a cool, dry cupboard. Because these candies are almost entirely sugar, they readily absorb moisture from the air. As they take on moisture, their surfaces become sticky and the pieces may fuse together.

Why does moisture affect them so quickly? To make hard candy, sugar is melted at a high temperature and cooked to a particular stage. The glass-like structure that forms is highly prone to absorbing moisture from the air. Candy left in an open container or loosely covered jar can develop a slightly sticky surface within a few hours; in a humid kitchen, this can happen sooner. For this reason, transfer akide candy from its original packaging to a screw-top glass jar or a plastic container with a gasket as soon as you get home. Close the container promptly after each use, and avoid contact with a damp spoon or hand.

What type of container works best? A glass jar is a practical choice because it does not retain odors and makes it easy to see what is inside. If you use a metal tin, a layer of paper inside can provide additional moisture protection. Do not leave candy in a plastic bag, since a thin bag may not fully block moisture. If you buy a large package, divide the candy into smaller portions in separate containers. This avoids repeatedly opening the large container and letting moisture in.

Can stuck pieces be saved? A few pieces that are only slightly stuck together may be separated gently by hand after dusting them with powdered sugar. The powdered sugar absorbs some moisture and helps the surfaces slide apart. If the candy has completely melted into a flowing mass, this method will not work and the product should be discarded.

How long does it stay fresh? When stored in dry, sealed conditions, akide candy may retain its freshness and crunch for up to six months at room temperature. It does not need to be refrigerated. Moisture and odors in the refrigerator can harm its texture and flavor, so a cool kitchen cupboard is a more suitable place.

Does homemade candy need different care? Homemade akide or lollipops generally contain fewer preservatives than commercially made candy and may retain slightly more moisture, so they should be eaten sooner, within 2–3 months. If candy is put in a container before it has cooled completely, steam inside can condense and cause moisture to build up. Wait until the candy has cooled fully to room temperature and hardened before sealing it in a container. Candy colored or flavored with natural dyes is somewhat more sensitive to light, so store it in a dark cupboard rather than on a bright countertop. If storing several colors or flavors together, put them in separate small bags inside the same larger container to keep their odors from mixing.
