How to Salvage Vegetables and Fruit with Freezer Burn

It is not possible to fully restore vegetables and fruit with freezer burn to their original condition, but you can cut away the affected parts and use what remains. This appearance is not spoilage but a quality loss caused by drying; the texture and flavor may no longer be the same, but the issue generally does not go beyond that appearance.

Why does freezer burn happen?
When air in the freezer reaches the food’s surface through a loose or punctured corner of the packaging, moisture on the surface gradually sublimates (turns directly into vapor) and escapes. The remaining area dries out, fades in color, and develops an icy, whitish texture; this usually appears on the outermost surface of fruits and vegetables. Frequently opening and closing the freezer door or allowing the temperature to fluctuate instead of staying steady around −18°C / 0°F also speeds up the process. Freezer burn appears much sooner on food that is repeatedly partially thawed and refrozen.

Making the affected food usable
After cutting away and discarding the freezer-burned areas with a knife, use what remains in cooked dishes rather than serving it raw in a salad; the texture loss is unnoticeable in soup, sautéed dishes, smoothies, or purées. If the affected area is limited to a small part of the food, the rest can be added directly to cooking. Fruit with freezer burn may release excess liquid after thawing, so reducing the recipe’s liquid a little helps prevent texture problems in cakes or compotes.

Preventing freezer burn
When freezing vegetables and fruit, store them in vacuum-sealed bags if possible, or bags with as much air removed as possible, to minimize contact between the surface and air. Writing the freezing date on the bag makes it easier to use the food within the recommended period (8–12 months for most vegetables). Keeping the freezer temperature steady and avoiding unnecessary frequent opening also slows moisture loss; a full freezer is more resistant to temperature fluctuations than a half-empty one.

Which fruits and vegetables are more prone to freezer burn?
Fruits and vegetables with high water content, such as tomatoes, zucchini, and strawberries, are more prone to freezer burn than those with lower water content because more moisture can evaporate from their surfaces. Leafy vegetables are also affected quickly because of their thin structure. By contrast, denser vegetables such as corn and peas show signs of freezer burn later under the same conditions. Briefly blanching and cooling produce before freezing stabilizes the cell structure, slows moisture loss, and helps it stay in good condition longer in the freezer.

If the package of food with freezer burn has no freezing date, the thickness and color of the ice can offer a rough estimate: a thin layer of ice suggests more recent drying, while a thick, yellowish layer indicates a process that began months ago. Although this is not a definitive measure, it offers a clue before you discard the food. In addition to writing the date on frozen food, noting its contents helps you know what you will find when opening the bag months later. This small habit makes it easier to distinguish food with freezer burn that is still usable from packages that have become unrecognizable and should be discarded. This simple observation can help you make a quick decision before throwing the food away.
