How to Tell If Mushrooms Have Gone Bad

Unlike other vegetables, mushrooms often show signs of spoilage first through a slimy surface and darkening. Fresh mushrooms have a dry, slightly matte surface and an ivory-beige color; a wet, sticky surface indicates spoilage may have started. The second sign is brown-black spots that begin around the edges of the cap, along with a sharp, ammonia-like odor. If you notice one of these signs, assess the mushrooms carefully; if both are present, discard them immediately.

Why Is Sliminess an Early Sign?
Because mushroom cells contain a lot of water, their surface reacts to spoilage more quickly than that of other vegetables. In the first stage of spoilage, the surface becomes coated in a thin, sticky layer of liquid that you can clearly feel when you touch it. Mushrooms at this stage may not smell bad yet, so checking odor alone is not enough. Touching the surface to see whether it is dry or sticky can provide an early warning before the smell changes.

Is Darkening or Spotting Normal?
Slight darkening around the edges of mushroom caps is common, especially after mushrooms have spent a few days in the refrigerator, and is not by itself a reason to discard them. These mushrooms can be cleaned and cooked soon. However, large, wet-looking spots or dark areas covering most of the cap indicate advanced spoilage. If the stem has also darkened and softened, the entire mushroom is no longer considered reliable.

When Is an Odor a Warning Sign?
Fresh mushrooms smell earthy and neutral. If that smell is replaced by a sharp, ammonia-like odor, the mushrooms have spoiled. This odor usually appears at the same time as sliminess or shortly afterward. Moisture inside the package can also be an indirect sign in packaged mushrooms: droplets on the inside of the package may indicate that spoilage has started even before the odor becomes noticeable. A strong smell as soon as you open the package makes the whole batch suspect without needing to smell the mushrooms individually.

Can Partially Spoiled Mushrooms Be Cleaned and Used?
If only a few mushrooms have slight darkening and their overall texture remains dry and firm, they can be wiped with a damp cloth and cooked soon. Mushrooms with a slimy surface are not included in this guidance. If most of the mushrooms in the package are slimy, smelly, or have large spots, it is safer to discard the whole batch rather than pick out a few and use the rest; spoilage can spread quickly between mushrooms. If even one mushroom in the package has become slimy, neighboring mushrooms that touched it cannot be considered safe to use without checking them separately.

How Long Can Fresh Mushrooms Be Stored?
Fresh white mushrooms can generally be stored safely for 4–7 days in the refrigerator in their original packaging or in a paper bag. Mushrooms stored in a sealed plastic container spoil much sooner because moisture is trapped. Wiping mushrooms with a damp cloth instead of washing them also extends their shelf life. Cut or sliced mushrooms spoil faster than whole ones and should generally be eaten within 2–3 days. Transferring mushrooms to a paper bag instead of leaving them in the package they came in can help them stay firmer through this period because moisture does not build up inside the package.
