Clumping and a yellowish color change are the clearest signs that powdered milk has spoiled. Fresh powdered milk is fine, free-flowing, and pale cream in color. Moisture can initially cause hard clumps that gradually darken and turn yellow.

What Do Smell and Taste Indicate? Although powdered milk is low in fat, its fat can oxidize over time and develop a waxy or rancid, sharp, sour odor. When mixed with water, it should have a mildly sweet smell; a metallic or musty taste means the product has lost freshness and should not be consumed. In some packages, the taste may change before the smell, with a faint bitter aftertaste noticeable in coffee or tea. This bitter aftertaste is an early warning; check the rest of the package.

How Do Opened and Unopened Packages Differ? An unopened package stored in a cool, dry cupboard can be kept safely until its printed date. Once the package has been opened, it is exposed to air and moisture; use the powder within 3 months at room temperature, or the risk of clumping increases. Transferring it to an airtight container may extend this period slightly, though that may not be enough in a humid kitchen. A damp spoon or a lid that does not close fully can make powdered milk spoil earlier than expected.

Spoiled powdered milk is not expected to cause acute poisoning, but oxidized fat may reduce nutritional value over time and cause stomach discomfort. Discard a clumped, yellowish, or rancid-smelling package even if the printed date has not passed. In summary, good powdered milk is fine and free-flowing with a neutral smell; hardening, darkening, or a rancid odor are signs that it has spoiled.

Is Powdered Milk Used in Infant Formula or Sports Drinks Different? Powder specially formulated for infant formula is usually more tightly packaged and often protected with nitrogen gas than regular powdered milk made for adults. It is affected by moisture and oxidation in the same way after opening. Store an opened container of infant formula tightly closed in a cool, dry place (not in the refrigerator), and use most products within 1 month of opening or as the label directs; never use a questionable package for infants. Nonfat milk powder used in sports nutrition contains less fat and may be more resistant to rancidity than whole milk powder, but it can still absorb moisture and clump. Smell can help you notice rancidity, and you should discard a product that smells off regardless of how much remains; but a normal smell does not show that a product, especially infant formula powder, is safe. Wipe the included scoop dry after each use and store it outside the container to keep moisture out. Dipping a wet scoop into the powder is a common cause of early spoilage and can shorten its usable life by weeks.
