Follow the manual for your pressure cooker model. Fill limits, required liquid, pressurization, cooking time, and pressure-release methods vary with the model and food. Do not overfill it; use the lower manual limit for foods that foam or expand. Check the gasket and steam outlet before use.
Instructions to hold a regulator upright, wait one minute, or lower the regulator cannot be applied to every model. Do not try to open the lid under pressure or force it. After cooking, release pressure only by the method the manual specifies for that food; verify that all pressure has gone before opening.
Follow the appliance’s appropriate instructions for frozen food. If thawing is required, use the refrigerator, a leakproof package in cold water changed every 30 minutes, or the microwave. Do not thaw on the counter or in hot water; cook immediately after cold-water or microwave thawing. Choose soaking and cooking times for legumes according to the recipe and appliance manual.
