What Should You Do if Grilled Chicken Burns Outside but Stays Raw Inside?

If grilled chicken burns on the outside while remaining raw inside, the cause is almost always heat that is too high combined with a piece that is too thick. The solution is to lower the heat to medium and finish cooking over indirect heat.

Why does grilled chicken burn outside while staying raw inside?

Over high heat, proteins and sugars on the chicken's surface caramelize quickly and form a dark crust, but heat cannot reach the center of the meat as quickly. Especially with thick, bone-in cuts such as thighs and wings, the outside may reach the desired color while the inside is still pink or even raw. Grilling directly over the flame worsens this because heat comes from only one direction and arrives very quickly. Putting cold chicken straight from the refrigerator onto the grill has the same effect: the outside can cook before the heat reaches the center. An undercooked center is not just a matter of taste; undercooked chicken carries a risk of Salmonella poisoning. Check the internal temperature instead of relying on appearance.

How can you fix chicken that is burnt outside and raw inside?

The safest method is to set up a two-zone grill: keep one part of the coals or flame directly hot, and leave the other part without coals or flame for indirect heat. First brown the chicken over direct heat, then move it to the indirect-heat area, close the lid, and cook it slowly until it reaches the required internal temperature. This lets the inside cook safely without further burning the outside. If the surface is already too dark while the inside is still raw, loosely wrap the chicken in foil and close the grill lid, or cook it for a few more minutes in a 200°C / 390°F oven. This is the safest way to finish the inside without burning the outside further. Use a meat thermometer in the thickest part to make sure the internal temperature reaches at least 74°C / 165°F; color alone is not a reliable indicator.

How does grilling time vary by chicken cut?

Boneless chicken breast has a thin, uniform shape, so it cooks relatively quickly and evenly even over direct heat. However, if it is thicker than a finger, it still carries the same risk of burning. With bone-in cuts such as thighs and wings, the bone transfers heat slowly, making the difference between how quickly the outside and inside cook more pronounced. These cuts generally need 15–20 minutes more over indirect heat than breast meat. Electric flat grills have no flame, so the risk of burning is lower, but their heat setting usually stays at one level, making a two-zone setup difficult. In that case, briefly cook the chicken over high heat first, then lower the heat and continue; this produces a similar effect.

Next time, let the chicken sit at room temperature for about 20 minutes before grilling (no more than 2 hours in total, or 1 hour above 32°C / 90°F), and cut thick pieces thinner beforehand to reduce the difference in cooking time between the outside and inside. Marinating the chicken in a yogurt- or lemon-based marinade before grilling can also slightly delay the outside from hardening and burning too quickly. The acid loosens surface proteins and slightly changes how quickly heat moves inward.
