When Should You Add Lemon, Vinegar, and Pomegranate Molasses to a Dish?

When a fresh, bright sourness is wanted, add lemon, vinegar, and pomegranate molasses near the end of cooking, as you turn off the heat, or at serving time; prolonged boiling dulls their sharpness and aroma. When they are added at the beginning, the acidity serves another purpose besides flavor: preventing vegetables from browning, preparing meat in a marinade, or building a gentle sour note throughout a dish.

The freshness of lemon juice comes from volatile aromatic compounds, which do not withstand heat. Lemon juice boiled for a long time retains its acidity but loses its aroma, leaving a flat, sometimes slightly bitter sourness. Lemon squeezed in as you take the pot off the heat gives the dish both acidity and a fresh aroma. For this reason, add lemon to soup, stews, and sautés as you turn off the heat or at the table. Lemon zest is also added at the end for the same reason; its aroma dissipates during long cooking.

Vinegar behaves differently from lemon. Its acid can evaporate with the steam, so boiling vinegar loses some of its sharpness, and the steam rising from the pot stings the eyes. You can use this quality intentionally: vinegar added at the beginning and simmered for a while leaves a soft, lingering sourness in the dish. Vinegar added at the end gives a sharper, more prominent sourness. Add vinegar to a boiling pot without leaning over it, and do not inhale the steam directly. Apple cider vinegar is milder and fruitier than white vinegar; if you substitute one for the other, adjust the amount by tasting.

Pomegranate molasses is concentrated pomegranate juice, and its sugar makes it sensitive to heat. Pomegranate molasses boiled for a long time thickens, can stick to the bottom of the pot, and shifts in flavor from sour toward sweet. For this reason, add it to cooked dishes during the final 10–15 minutes. Use it directly in uncooked dishes such as salads, muhammara (red pepper and walnut dip), and çiğ köfte (spiced bulgur patties), where its flavor comes through most clearly. The difference between a product whose only ingredient is pomegranate and a sweetened pomegranate sauce is noticeable in cooking too.

The timing of acidity also affects color and texture. Acid dulls the color of green vegetables; if spinach, green beans, and peas are cooked with lemon, they turn khaki rather than bright green. Squeeze lemon over these vegetables at the table. Acid also slows the softening of vegetables such as potatoes and carrots; potatoes added early to a sour sauce stay firm for a long time. For this reason, in sour dishes with potatoes, cook the potatoes until tender first, then add lemon or vinegar.

In some cases, acidity is deliberately used at the beginning. As soon as artichokes and celery are chopped, place them in lemon water to keep them from browning. Marinate meat with yogurt and lemon in the refrigerator. In olive-oil dishes, add lemon to the pot at the beginning along with the tomatoes to create a gentle sourness throughout. An egg-and-lemon liaison is different: after removing the pot from the heat, temper the mixture by whisking in a few spoonfuls of hot liquid, then add it to the pot. If you pour the liaison directly into a boiling dish, it will curdle and form lumps.
