Why Do You Spoon Hot Fat Over Meat in a Pan?

Spoon-basting meat as it cooks heats not only the side touching the pan but also the top. Cooking moves faster, heat reaches the meat from two sides, and the butter carries garlic and herb aromas over its surface. Do this near the end of cooking, after adding butter, over medium heat.

When a thick steak or chop goes into the pan, heat reaches it only from below. Until the meat is turned, the top stays cool and the center heats slowly. If you tilt the pan and repeatedly spoon the melted fat over the meat, the top also comes into contact with hot fat. Heat then moves in from two sides, cooking time is reduced, and the center is more evenly cooked when you cut into it. This method makes a noticeable difference, especially with pieces thicker than 3 centimeters.

Basting also carries flavor. During the last 1–2 minutes of cooking, add 1 pat of butter, a few crushed garlic cloves, and a sprig of thyme or rosemary to the pan. The butter melts and foams, picking up the aroma of the garlic and herbs; spooning it over the meat puts that aroma directly on the surface. Use the garlic whole with its skin on or crushed; finely chopped garlic burns quickly at this heat and turns bitter. Add the thyme and rosemary sprigs with their stems so the leaves do not fall off and burn in the pan.

Timing matters because butter browns if added too early. First sear the meat in a neutral oil that can withstand high heat to form a crust. Add the butter only after the crust has formed and the heat has been lowered to medium. It is normal for the butter to foam, but if the foam subsides and the fat starts turning dark brown, you have waited too long. Tilt the pan to one side so the fat pools in a corner, then scoop it up with a spoon. Hold the handle with a cloth or oven mitt while tilting the pan. Because the fat collects in one spot, the spoon fills each time.

A few details make the technique easier. A deep serving spoon, larger than a tablespoon, carries more fat and speeds up the work. Spoon the fat over the entire top surface in sequence, not just the center. The process takes 1–2 minutes; if it takes longer, lower the heat because the fat being moved around with the spoon keeps heating in the pan. The same method works for a fish fillet, but the time is shorter, and the fat should be spooned over the flesh, not the skin. If there is too little fat in the pan, add 1 more pat of butter.

The method has a limit: spooning fat over the meat does not measure its doneness. For thick pieces, use a thermometer to make the final decision and remove the meat from the pan once it reaches the desired internal temperature. Do not discard the butter and garlic left in the pan. While the meat rests, add a few spoonfuls of liquid and scrape up the browned bits to make a small sauce. Add any juices the resting meat releases on the plate to the sauce as well. If there are burnt pieces of garlic, strain the sauce; otherwise, they will make it bitter.
