Why Does Food Dry Out in an Air Fryer?

Food often dries out in an air fryer because its rapidly circulating hot air evaporates moisture from the surface much faster than a conventional oven does; this is especially noticeable with lean or low-fat ingredients. An air fryer is essentially a small, high-speed convection oven, and its intense airflow both cooks quickly and draws out moisture rapidly. Without the right amount of oil, temperature, and cooking time together, this speed advantage can easily turn into dryness.

How does an air fryer’s fast airflow evaporate moisture?
An air fryer works by blowing rapidly circulating hot air into the basket; this airflow removes the layer of moisture on the food’s surface much faster than a conventional oven. When the surface dries quickly, the outside browns fast, but sometimes moisture from inside escapes at the same time. For this reason, a conventional-oven recipe adapted directly for the air fryer usually needs less time and a lower temperature; otherwise, the food loses more moisture than necessary. Even with less time and heat, chicken must reach 74°C / 165°F inside and fish 63°C / 145°F; a food thermometer is the most reliable way to check.

Which foods are more prone to drying out?
Lean meats such as chicken breast lack natural protection against an air fryer’s fast airflow; without a layer of fat, surface moisture is lost very quickly, and the inside of the meat can easily dry out during that time. Thin, low-fat foods such as fish fillets are at similar risk. By contrast, meats that carry their own fat, such as chicken thighs and lamb chops, are affected much less by this process; the fat melts during cooking and helps keep the meat somewhat moist.

Why does an overcrowded basket increase drying?
When the basket is filled with more food than necessary, hot air cannot pass evenly between the pieces; some areas are exposed directly to the airflow and dry out excessively, while pieces touching one another may not cook enough. This imbalance causes both drying and uneven cooking. Keeping the basket no more than half full and leaving space between pieces lets airflow reach every surface, largely preventing this problem. Shaking the basket once during cooking or rearranging the pieces serves the same purpose; it also exposes surfaces that receive less airflow.

What should you keep in mind to prevent drying?
Before cooking, brush a thin layer of oil over the food’s surface to create a barrier against the fast airflow and slow moisture loss. Marinated meats provide similar protection; the oil and liquid in the marinade help keep the surface somewhat moist during cooking. Setting the temperature slightly lower than the recipe recommends and checking once halfway through the cooking time are among the most practical ways to keep food from overcooking and drying out. Placing a small bowl of water under the basket can also increase the ambient moisture somewhat in some air fryer models and reduce drying; although this method does not have the same effect in every appliance, it is worth trying, especially with pieces that cook for a long time.
