Why Does Salt Added During Cooking Taste Different From Salt Added at the Table?

Salt added during cooking penetrates the food and seasons each bite throughout; salt sprinkled at the table stays on the surface, giving the tongue a sharp hit of salt first and then a bland center. The same amount in grams of salt used in two ways makes two different dishes. Most of the salt is therefore added during cooking; table salt is only a finishing touch and should be used only after tasting the food.

During cooking, salt dissolves in liquid and gradually moves into the food. Salt that enters a boiled potato, the rice in pilaf, or meat cooking in a pot seasons each bite from within; when you bite into it, the flavor is even from start to finish. Salt sprinkled at the table does not have time to make this journey. The crystals stay on the surface and dissolve on the tongue, giving a strong hit of salt at first; as you keep chewing, the unsalted center becomes apparent. No matter how much salt you add to a potato boiled without salt at the table, the inside will remain bland. For the same reason, salt for pilaf is added to the water; salt sprinkled over cooked pilaf does not reach inside the grains.

During cooking, salt also does other jobs beyond adding flavor, and these do not happen at the table. Salt draws water from onions and vegetables, helping onions soften without burning. It relaxes the muscle proteins in meat and helps the meat lose less water as it cooks. In dough, it strengthens gluten and balances yeast. Salt in pasta water and in water for boiling vegetables passes into the food only during cooking. That is why salt omitted during cooking cannot be made up for later; what is missing is not just flavor but also the work salt is meant to do in the dish.

Salt at the table also has a distinctive benefit: salt left on the surface is more noticeable than the same amount dissolved throughout the food. A few flakes of flaky salt sprinkled over grilled meat, sliced tomato, or a vegetable just out of the oven add a crisp, salty bite. That is why chefs sprinkle salt on the plate at the last moment. But this finishing touch goes on a dish that is already properly seasoned inside; it is used to complete a well-seasoned dish, not to rescue an unsalted one.

For a balanced result, think about salt in two stages. Add the base amount during cooking at the right time for the dish: at the beginning for boiling water, toward the end for a sauté, and during the window required by the recipe for meat. Make the final adjustment when the dish reaches its finished consistency. Once food is served, add salt only if desired and after tasting it first. Salting without tasting is a habit; if the dish is already properly seasoned, the salt at the table can suddenly make it too salty.

This difference is even more noticeable in cold dishes. Olive-oil dishes, salads, and cold appetizers taste less salty as they cool; that is one reason people may want to add salt at the table. If you adjust the salt in these dishes by tasting them at serving temperature rather than while they are hot, there will be no need for salt at the table. For the same reason, you can season a dish that will be served cold somewhat more generously while it cooks, but make that decision only after cooling and tasting a small portion of the dish.

İkisinin ayrı işler yaptığını düşünmemiştim; pişirme tuzunu kısıp sofrada tamamlamaya çalışıyordum ve yemek hep düz kalıyordu. Tuzu azaltmam gereken bir dönemdi, o yüzden böyle yapıyordum. Meğer tuzu geciktirmek azaltmak değil, yemeği tatsız bırakmak oluyormuş.

Soğandan ve sebzeden su çekme işi sofrada gerçekleşmiyor, doğru. O yüzden sonradan atılan tuz asla aynı sonucu vermiyor.
