Cooking Mistakes and How to Fix Them
Learn why meat turns tough, sauces split, and food sticks to a pan, and how to prevent these problems before they happen.
What Will You Learn in This Lesson?
- Understand why meat turns tough and use the right heat level and resting time
- Recognize why a sauce has split and use tempering
- Preheat a pan properly to prevent sticking
- Choose an oil with a suitable smoke point for frying and reduce splattering
- Improve browning by timing when you salt
Equipment You’ll Need
Required
- A kitchen thermometer
- A timer
- A heat-resistant wire whisk (for tempering)
- Paper towels (to dry food)
Optional
- A deep-fry thermometer
- An infrared surface thermometer
Alternative
- If you do not have a thermometer: press the meat to check its texture—soft means rare, springy means medium, and firm means well done
Safety
- Do not put wet food into hot oil; the water will vaporize suddenly and cause the oil to splatter violently.
- Do not run a hot, scorched pan under water before it cools; steam can rise suddenly and burn your hand.
- Never let water touch hot oil. If it catches fire, cover the pan with its lid and turn off the stove; do not pour water on it.
