Cube and Strip Cutting Techniques
Learn julienne, baton, and dice sizes, how to cut even cubes, and what to watch for when making brunoise.
What Will You Learn in This Lesson?
- Cut vegetables into slices (slabs) of even thickness
- Apply the differences between julienne and baton cuts
- Use large, medium, and small dice sizes in the right context
- Turn strips and cut across them to make even cubes
- Pay attention to knife sharpness when cutting small dice such as brunoise
Equipment You’ll Need
Required
- Chef’s knife
- A stable cutting board
- A thin slicing knife for flattening the vegetable
Optional
- Julienne slicer or mandoline
- Knife honing steel
Alternative
- If you do not have a mandoline: cutting thin strips by hand takes a little longer but gives the same result
Safety
- Before cutting a vegetable, always trim one side flat; cutting on a rounded surface can make it slip on the board and cause cuts.
- When cutting thin strips, your fingers are closer to the knife than usual; keep the claw grip in place at all times.
- If using a mandoline, always use the hand guard; its blade is much sharper than a knife and can cause a deep cut before you notice it.
