Cutting and Prep Mistakes
Learn the most common kitchen prep mistakes and how to avoid them, from a dull knife and incorrect chopping size to cross-contamination and preparing vegetables too early.
What Will You Learn in This Lesson?
- Sharpen a knife correctly and use it safely with the claw grip
- Chop vegetables into even pieces for balanced cooking
- Prevent cross-contamination by using separate cutting boards for raw and cooked food
- Prep onions and garlic quickly with the correct technique
- Complete all prep before cooking begins using mise en place
Equipment You’ll Need
Required
- Sharp chef’s knife
- Honing steel
- At least two cutting boards (separate ones for raw meat and vegetables)
- A stable cutting board
Optional
- Sharpening stone
- Small prep bowls (to separate chopped ingredients)
Alternative
- If the board slips: fold a damp cloth underneath it to keep it from sliding.
Safety
- A dull knife is more dangerous than a sharp knife; it takes too much force to make it slide through food, and it can slip onto your hand.
- Do not try to catch a falling knife; step back and let it fall to the floor.
- Do not use the board you used for raw meat on ready-to-eat vegetables without washing it; bacteria can transfer directly.
