Equipment You’ll Need
Required
- A heating or cooling setup (a chafing dish or a tray with ice)
- Serving plates and platters
- A kitchen thermometer
- Label cards (for ingredients and allergens)
Optional
- A garnish set (herbs, edible flowers, sliced fruit)
- Extra serving spoons
Alternative
- If you do not have a chafing dish: serve the food in small batches and reheat it between batches; reheat cooled food to 74°C / 165°F and bring sauces and soups to a boil
Safety
- Do not leave hot food at room temperature for more than 2 hours (1 hour in hot weather); this limit is easily exceeded at a gathering.
- Use a separate serving spoon for each dish to prevent allergen cross-contact.
- Do not touch the hot surfaces of the heating equipment with bare hands.
- Clearly label dishes containing allergens and place the labels where guests can see them.
