Practical Ways to Rescue a Dish
Learn practical ways to rescue an oversalted, broken, burnt, or overly watery dish before throwing it away.
What Will You Learn in This Lesson?
- Distinguish which mistakes can be fixed and which cannot.
- Balance an oversalted dish by increasing its volume.
- Re-emulsify a broken sauce with egg yolk.
- Thicken an overly watery dish with a starch slurry.
- Moisten dried-out meat by reheating it in sauce or stock.
Equipment You’ll Need
Required
- A ladle
- A spare pot (to transfer food with a burnt smell)
- A whisk (to bring a broken sauce back together)
- Cornstarch
Optional
- An immersion blender (to thicken a watery dish)
- A strainer
Alternative
- If you do not have an immersion blender, blend part of the dish in a countertop blender and stir it back in.
Safety
- When transferring food with a burnt smell to another pot, pour it out without scraping the bottom; splashing hot liquid can burn your hand.
- Before running an immersion blender in hot liquid, fully submerge the blade; a partly submerged blender will splash.
- Do not touch the blade of a blender or mixer with your finger or a spoon while it is turning; unplug the appliance first.
