Safety
- Do not leave cooked food at room temperature for more than 2 hours; this is a critical limit for bacterial growth.
- Condensation from steam when resting hot food in a closed container can cause moisture and mold; leave the lid slightly ajar.
- Rest raw dough in the refrigerator, not at room temperature.
