Sauce and Mixture Preparation
Learn to thicken with a roux, build an emulsion, use the reduction technique, and prevent curdling in cream- and yogurt-based sauces.
What Will You Learn in This Lesson?
- Thicken a sauce to the right consistency with a roux
- Build an emulsion and bring it back together if it breaks
- Thicken and flavor a liquid using the reduction technique
- Prevent curdling in cream- and yogurt-based sauces
- Balance acidity and sweetness when seasoning a sauce
Equipment You’ll Need
Required
- Mixing bowls in various sizes
- Whisk
- Wooden spoon or silicone spatula
- Fine-mesh strainer
- Measuring cup
Optional
- Immersion blender
- Small piece of cheesecloth
Alternative
- If you do not have a whisk: whisk rapidly with broad strokes using a fork.
- If you do not have an immersion blender: strain the sauce through cheesecloth to make it smooth.
Safety
- When whisking hot sauce, keep the bowl slightly away from yourself; splashes can cause burns.
- Cook sauces that form a skin over low heat; high heat scorches the bottom and ruins the sauce.
- Prepare mixtures containing allergens such as hazelnuts or almonds in a separate container and label them.
