Slicing Techniques
Learn to safely slice round vegetables, cut on the bias, slice meat against the grain, and chiffonade herbs.
What Will You Learn in This Lesson?
- Safely slice a round vegetable after flattening one side
- Know when to use a bias cut
- Slice meat against the grain to make it more tender
- Cut leafy herbs into thin strips using the chiffonade technique
- Slice soft ingredients with a single pull instead of sawing
Equipment You’ll Need
Required
- A long, narrow-bladed slicing or chef’s knife
- A large cutting board
- A sharp knife
Optional
- A serrated bread knife for soft foods
- A knife-sharpening steel
Alternative
- If you do not have a slicing knife, use a sharp chef’s knife and slice with a single pulling motion in one direction
Safety
- If a knife is dull, sharpen it right away; a dull knife can slip on food and veer unexpectedly, making it more dangerous than a sharp knife.
- When making thin slices, do not rest the fingertips of your other hand flat on top of the food; keep them tucked back in a claw grip.
- When separating slices one at a time, keep your fingers out of the blade's path and move the knife slowly and with control.
