Equipment You’ll Need
Required
- One chef’s knife
- One vegetable peeler
- At least two separate cutting boards (one for raw meat and one for vegetables)
- A colander or skimmer
- A container for organic waste
Optional
- A vegetable-cleaning brush
- Kitchen shears
Alternative
- If you do not have separate cutting boards: After using a board for raw meat, do not reuse it without first washing it in hot, soapy water and drying it.
- If you do not have a vegetable brush: Use a clean sponge reserved only for this task.
Safety
- Before using a knife or cutting board that has touched raw meat or poultry on vegetables, wash it thoroughly with hot, soapy water.
- Do not leave food scraps uncovered on the counter; they can cause odors and attract pests.
- When peeling, always keep your hand out of the path of the knife or peeler.
