Stovetop Cooking Techniques
Learn the difference between sautéing and sweating, boiling and simmering, how to deglaze a pot, and the proper order for making a stew.
What Will You Learn in This Lesson?
- Apply the difference between sautéing and sweating.
- Choose between boiling and simmering appropriately.
- Make a sauce base by deglazing the browned bits from the bottom of a pot.
- Follow the proper sequence for long-cooked dishes such as stews: searing, sweating, and simmering.
- Choose the right pot size for the amount of ingredients.
Equipment You’ll Need
Required
- A heavy-bottomed pot
- A tight-fitting lid
- A wooden or silicone spoon
- Heat-resistant oven mitts or a pot holder
- Tongs
Optional
- A kitchen thermometer
- A colander
Alternative
- If you do not have heat-resistant mitts, use a folded, dry cloth; never handle a hot pot with a wet cloth.
- If you do not have a colander, leave the pot lid slightly ajar to drain the liquid.
Safety
- To avoid steam burns, open the lid away from yourself.
- Never touch hot handles with bare hands. A wet cloth conducts heat directly and can burn you.
- If boiling liquid starts to spill over, lower the heat first and wait for the foam to settle before fully lifting the pot off the burner.
