Taste and Texture Problems
Learn what causes and how to fix common kitchen problems, from getting the salt balance wrong and sauces that are too thin or too thick to bland flavors.
What Will You Learn in This Lesson?
- Adjust the salt balance gradually throughout cooking
- Balance a dish that is too sour or too sweet
- Test a sauce’s consistency using the back-of-the-spoon method
- Correct a sauce that is too thin or too thick
- Add depth to a bland dish with umami or acid
Equipment You’ll Need
Required
- A wire whisk
- A wooden spoon (for testing consistency)
- A strainer
- A ladle
Optional
- Cornstarch (for quick thickening)
- Small tasting spoons
Alternative
- If you do not have a strainer, pass the sauce through a fine-mesh colander
Safety
- Do not taste a sauce while it is boiling hot; first spoon some out and let it cool for a few seconds.
- Do not dip a tasting spoon back into the pot without washing it; bacteria can contaminate the entire dish.
