Vegetable and Fruit Prep Techniques
Learn how to wash produce properly, use the right knife cuts, stop browning, and plan ahead with mise en place.
What Will You Learn in This Lesson?
- Wash and trim vegetables and fruit using the right method
- Apply julienne, brunoise, and chiffonade cutting techniques
- Prevent cut vegetables and fruit from browning (oxidizing)
- Prepare fruit with different care than vegetables
- Complete preparation before cooking by following the mise en place principle
Equipment You’ll Need
Required
- One paring knife
- One cutting board
- One vegetable peeler
- A large bowl for washing and soaking
Optional
- A corer or pitter (for fruit such as apples and cherries)
- A grater
Alternative
- If you do not have a peeler: use a paring knife to remove a thin layer of peel
Safety
- When peeling vegetables, always move the knife or peeler away from yourself, not toward your palm.
- When cutting pitted fruit, remember that the knife may hit the pit and slip; proceed slowly and carefully around the pit.
- Before cutting vegetables and fruit that will be eaten raw, wash them thoroughly under running water; soil and residue on the peel can be carried inside by the knife.
