What role does honey play in a recipe?

Honey isn't just a sweetener — it's also a moisture-holding ingredient; added to cake or cookie dough it keeps the result softer for longer, and in marinades it leaves a light caramelised layer on the surface of meat. Since honey is moister than granulated sugar, it also indirectly affects how much liquid a recipe needs.

Which alternative comes closest to honey?
