On vegetables and fruit, whitish ice crystals or a wrinkled, dry surface are the typical sign of freezer burn; vegetables like this show noticeably more water loss once cooked. On bread and baked goods, freezer burn usually shows up as a dry, brittle crust and ice crystals inside.
Can freezer-burned food be eaten, and how do you prevent it?
Freezer-burned parts are not unsafe from a food safety standpoint, they have only lost taste and texture; the affected area can be cut away with a knife, and the rest cooked safely. To prevent it, food should be packed before freezing with as little air gap as possible, using vacuum bags or tightly wrapped cling film. Keeping the freezer at a steady -18°C and not opening the door unnecessarily often slows the evaporation-refreezing cycle and reduces the risk of freezer burn.
Is there an extra step for long-term storage?
Meat and chicken that will stay in the freezer for a long time can get double protection by wrapping a second layer of cling film or a bag over the original packaging; this simple step makes up for small tears or holes in the packaging. Writing the freezing date on packages also makes it easier to track which food is older; eating the oldest food first means nothing sits around longer than it should. Freezing food in individual portions rather than one large block is another practical way to reduce the risk of freezer burn; a large block that cannot be used all at once and gets refrozen loses quality and becomes more prone to burn; smaller portions let you thaw only what is needed, so the rest stays untouched and sealed in the freezer.
