An oven needs preheating because, until the interior reaches the temperature shown on the dial, how fast the food cooks and how it turns out becomes unpredictable. Food put into a cold oven spends its first few minutes at a lower temperature, so batters that need to rise, like cake or bread, can start setting before they've risen enough.
In a static (top-and-bottom heat) oven, preheating usually takes 10-15 minutes; in a fan oven, hot air circulates faster, so that drops to 7-10 minutes.
What happens if you skip preheating?
A cake batter put into a cold oven warms up slowly while the oven works its way up to temperature on its own; during that stretch the raising agent loses some of its power, and the top of the cake can start to set before it has risen properly. The result is usually a flatter, denser cake.
With meat and chicken, skipping the preheat delays browning on the outside; the extra time it takes for the surface to brown can leave the inside overcooked by the time it does.
The difference is even more obvious with quick-baking items like pizza and bread; doughs like these rise from the high heat they get in the first few minutes, and dough going into a cold oven misses that initial burst, coming out flatter than it should.
Why does preheating time vary by oven type?
An oven's heating element power, interior volume and insulation all directly affect preheating time; small, well-insulated ovens reach the 150-180°C range faster, while large, older ovens need longer to hit the same temperature. In an old oven with a weakened heating element, that can stretch out to as much as 20 minutes.
An oven's own dial doesn't always reflect the true interior temperature; checking with a separate oven thermometer gives a more reliable result than trusting the dial outright.
Should the baking tray go in during preheating too?
Thick, heat-retaining items like a pizza stone or a cast-iron pan should go into the oven during preheating so they heat up together with it; that way, the moment the food goes in, it meets a hot surface from underneath and the base cooks faster. Thin metal trays make less of a difference this way and can be added after preheating finishes.
Care is needed when putting cold dough onto a hot tray; a sudden temperature change can crack some glass dishes, so glass shouldn't go in during preheating.
What happens if the oven door is opened during preheating?
Opening and closing the door before preheating finishes lets most of the hot air inside escape, and lengthens how long it takes the oven to reach its target temperature. Most ovens signal with a beep or a light once the dial temperature is reached; putting food in before that signal largely defeats the purpose of preheating in the first place.
When baking several batches in a row, opening the door as little as possible keeps the temperature steady and gives each batch a more consistent result.
Watching through the oven's glass door is a far safer habit than opening it; switching on the interior light and looking through the glass gives plenty of information about how the bake is going without affecting the temperature at all.
