When something baked in the oven scorches on the outside while staying raw in the middle, the most common cause is the oven being set to too high a temperature. High heat browns the surface quickly, but the time it takes heat to reach the center doesn't change — so the outside finishes long before the inside does.
This gap shows up even more with a thick, dense batter or a large cut of meat, since the heat has a longer distance to travel to reach the middle. Thinner, flatter items run into this problem far less often.
How much do oven rack position and pan choice matter?
A pan placed too close to the top rack sits right next to the upper heating element and browns the surface faster than it should. Moving the item to the middle rack lets heat reach it more evenly from both sides.
Dark, thin metal pans absorb heat quickly and pass it straight to the surface, which can speed up early browning; a lighter-colored pan or a glass dish slows down that surface heat buildup a little.
How do you stop the scorched-outside, raw-inside problem?
Dropping the oven temperature by ten to fifteen degrees and baking a bit longer gives heat more time to reach the center without burning the surface early. Once the top has reached the color you want, loosely covering it with foil lets the inside keep cooking without the outside darkening further.
Testing the center with a thin skewer or knife near the end of baking, checking that it comes out clean, is a far more reliable check than judging doneness by the surface color alone.
Does fan-assisted vs. static oven type matter?
Fan-assisted ovens spread heat more evenly, so the scorched-outside, raw-inside problem shows up a bit less than in static ovens; even so, the same issue can appear with a fan if the temperature is set too high. When baking with a fan oven, it's usually recommended to keep the temperature 10 to 20 degrees lower than what a recipe calls for.
Using the oven without preheating also contributes to the problem; food put into a cold oven goes through an uneven temperature swing while it warms up, which can widen the gap between how done the surface is versus the center. Preheating for at least ten to fifteen minutes cuts down on that swing.
A miscalibrated oven thermostat is also a common culprit; using a separate oven thermometer is the most reliable way to check whether the display is actually showing the real temperature inside.
A dense batter baked in a deep pan shows a bigger gap between outside and inside doneness than the same batter in a shallow pan; the deeper it is, the longer heat takes to reach the center. Using a shallower, wider pan for the same recipe can narrow that gap.
The pan's material matters as much as its color; silicone pans conduct heat more slowly than metal, which can stretch out baking time a bit but also keeps the surface from browning as quickly.
