How to Store Solid Fats Like Margarine and Suet

Solid fats like margarine and rendered suet can be kept in a cool pantry while unopened, but once opened, it is best to store them in an airtight container in the fridge; solid fats left open at room temperature can turn rancid within a few weeks.

Why do solid fats need special storage?

Margarine is made by hydrogenating vegetable oils and has a slightly higher water content than butter, which can make room temperature a friendlier environment for bacteria to grow. Suet, rendered solid animal fat from around the kidneys or belly, is pure fat with no water in it, but it oxidises on contact with air, and its risk of turning rancid is actually higher than margarine's.

Both types of fat fade in colour and lose flavour if left exposed to light for too long, so solid fats left in clear packaging on the counter for a long time spoil faster than those kept in a dark cupboard.

What are the right storage conditions?

Unopened margarine can sit in a cool pantry until the date printed on the packaging, but once opened it should move to the fridge with the container sealed tightly. Rendered and strained suet can be kept in airtight glass jars for a few months in the fridge, and up to a year in the freezer, which is the most reliable method for long-term storage.

Neither type of fat should be stored near strongly scented foods such as onions or fish; solid fats absorb surrounding smells easily, and that smell carries through into whatever you cook with it. The spoon used should always be dry, since touching the fat with a damp spoon raises the risk of mould.

How do you tell if it has spoiled?

Rancid solid fat develops a sharp smell close to paint or old cooking oil; once that smell is noticeable, the fat should be thrown out without tasting it. If coloured spots or a fuzzy layer of mould appear on the surface, the whole batch should be considered unsafe and discarded; scraping off the visible mould and using the rest is not recommended for solid fats, since mould roots can reach deeper than what is visible.

Does the type of packaging matter?

Foil-wrapped margarine blocks light out entirely, which delays rancidity, while margarine sold in clear plastic tubs is more exposed to light and is better moved to a dark cupboard. When making suet at home, sterilising the jar with boiling water beforehand keeps stray bacteria from getting mixed into the fat and noticeably extends its shelf life.

What is the hidden risk of leaving it out?

Solid fat spoiling at room temperature is not always visible right away; some compounds inside the fat start oxidising quietly before the smell or taste changes. That is why assuming it still smells fine, so it is usable is only safe for short periods; once it has sat open for more than a few weeks, quality can start declining before the smell makes it obvious. Writing the date it was opened on the container is a simple way to keep track of this kind of quiet quality loss.

Which part of the fridge works best?

Solid fats should sit on a middle shelf rather than the door compartment; the door swings open and shut often, so that spot sees the biggest temperature swings, and those swings can leave droplets of moisture on the surface of the fat. Margarine with a higher salt content resists rancidity slightly better than unsalted or low-salt versions, but that only buys a few extra days, it does not replace proper long-term storage.
