How Many Days Does Kombucha Take to Ferment?

Kombucha reaches a balanced, tangy-sweet taste during its first fermentation at room temperature (20-25°C) in about 7-10 days; left longer, the flavour sharpens toward vinegar.

Why Isn't There One Exact Number?

Fermentation time depends on room temperature, the age of the SCOBY culture, and the sugar ratio; a fermentation that finishes in 6-7 days in a warm kitchen can stretch to 10-12 days somewhere cooler. That is why taste matters more than the calendar here.

How Long Does the Second Fermentation Take?

Bottled with fruit or spices added, a second fermentation at room temperature in a sealed bottle takes 2-4 days; the carbon dioxide it builds up gives the drink its fizz. Opening the bottles once a day during this stage releases excess pressure.

How Does Temperature Change the Timing?

Above 25°C, fermentation speeds up and kombucha can start tasting tangy in 5-6 days; in a cooler spot around 18-20°C, reaching the same flavour can take 10-14 days. In very warm rooms, the faster fermentation can turn sharp before you notice.

How Do You Decide When It's Ready?

Should Bottles Go in the Fridge After Bottling?

Once the second fermentation is done, bottles should move to the fridge; the cold nearly stops fermentation and slows how fast the fizz escapes. Kombucha kept chilled stays fresh for about 2-3 weeks, while a bottle left at room temperature keeps fermenting and turns sharper by the day.

Do Black and Green Tea Ferment at the Same Speed?

Kombucha made with black tea ferments a touch more slowly than green tea, thanks to its higher tannin content; the timing can stretch by 1-2 days. Kombucha made with green tea tends to reach the same tartness a little sooner.

Yazıda 7-10 gün deniyor ama benim mutfağım serin olduğu için 14 günde bile istediğim ekşiliğe ulaşamadı, hâlâ tatlı kalıyordu. Sürenin bu kadar geniş bir aralıkta değişebilmesi kafa karıştırıcı oldu.

Serin mutfaklarda bu tamamen normal, 18-20 derecede fermantasyon gerçekten 10-14 güne kadar uzayabiliyor. Kaseyi biraz daha sıcak bir köşeye taşımanızı, ya da aynı süre içinde tadımı sıklaştırıp ekşilik yakalandığında hemen şişelemenizi öneririm.
