If the recipe just needs a legume for bulk rather than chickpeas specifically, pinto beans or white beans can stand in.

How do you quick-cook dried chickpeas in a pinch?

Normally soaked overnight, chickpeas can instead be dropped into boiling water, boiled for 2 minutes, then taken off the heat and left to sit for an hour — this gets them nearly as soft as an overnight soak. Prepped this way, they finish cooking in a pressure cooker in about 20-25 minutes; adding a quarter teaspoon of baking soda to the water shortens cooking time, though too much can break down the skins, so it's worth measuring carefully.
