Cold cream, at least 30% fat, whipped at medium-high speed with a mixer usually reaches soft peaks in 3-5 minutes and stiff peaks in 5-7 minutes.
Why does cold cream matter?
The fat in cream stays in solid particles while cold, and those particles wrap around air bubbles during whipping to support the structure. Cream at room temperature has softer fat that can't hold air bubbles as well, so whipping takes longer and the result isn't as stable.
What's the difference between soft and stiff peaks?
At the soft-peak stage, lifting the whisk leaves a tip that gently folds over — ideal for spooning over fruit or desserts. At stiff peaks, the tip stands upright — the consistency needed for topping a cake or piping through a bag.
Whipping a few minutes past stiff peaks separates the fat out into butter, known as the cream "breaking"; there's no coming back from that point, and the cream becomes unusable.
When should sugar go in?
Powdered sugar is usually added as the cream nears soft peaks, around the 2-3 minute mark; too early and it can slow the rise slightly, too late and it's harder to mix in evenly.
How does timing change with a hand whisk?
Cream whipped by hand with a whisk takes much longer than with a mixer — reaching stiff peaks can take 10-15 minutes of continuous whisking. For larger batches, a mixer saves both time and effort.
Can broken cream be saved?
Cream that's just starting to clump can be partly rescued by folding in one or two tablespoons of unwhipped cold liquid cream by hand; once it's fully turned to butter, though, this trick won't work.
Does the bowl shape affect timing?
Cream whipped in a narrow, deep bowl traps air a bit faster than in a wide, shallow one, since the whisk meets more resistance; metal bowls also hold cold better than plastic ones, which can shorten whipping time.

Light kremanın yağ oranı düşük olduğu için kabarması gerçekten zorlaşıyor, haklısınız. En az %30 yağlı krema kullanmayı önereceğim, yumuşak tepe kıvamı bile o oranın altında güvenilir çıkmıyor.
